Baked Pears

My director has a pear tree in his garden and has been giving them to everyone so I thought I would have some! Uncooked they area little hard, very sweet but hard. So I figured I would try baking them. This is my favorite autumn desert.




Ingredients:
Pears (I used 4 for two people)
2 tbsp honey
2 tbsp coconut oil
1 tsp vanilla extract
Dash on cinnamon





Method:
Heat oven to 190°. Peel and core the pears, cut in half and place face down in a shallow dish. Microwave the oil, vanilla extract and honey until melted. Pour over the pears and place into the oven for 20 minutes. Turn the pears and baste with the syrup, cook for a further 20 minutes. Leave for 5 minutes to cool before serving with the syrup and some yogurt or ice cream.
