Banana and raisin Bread

This is a really simple recipe for a tasty wheat/gluten free banana bread.

Ingredients:
3 ripe banana's
3 eggs
2 tbsp honey
3/4 tsp baking soda
40g coconut flour
2 handfuls of raisins







Method:
Preheat oven to 160°C, prepare a loaf tin with butter and/or grease proof paper. Mash the banana's and eggs together until smooth (I use a blender), add in the honey, baking soda and coconut flour. Once all blended stir in the raisins. Let the mixture sit for several minutes and allow the flour to absorb the liquids. Pour the mixture into the loaf tin and place in the oven for around 40 minutes until golden and cooked through (the first time I made this it took 35 minutes, the second time took a little longer).
