Coconut Flour Muffins

If your like me and love breads and muffins but want to make a healthier flour free version then this recipe is for you. These muffins are lovely light and fluffy and can be adapted to suite your taste bubs.

Firstly we have the Cheesy Muffins

Ingredients:
4 eggs
3 tbsp of coconut flour
2 tbsp of natural yogurt
1/4 tsp baking powder
1/2 cup grated cheddar
salt and pepper to season




Method:
In a bowl mix the egg and yogurt until combined, add in the flour, cheese, baking powder, salt and pepper. Give the mixture a good stir, place into muffin cases and cook at 180° for 15 - 20 minutes. 

For a sweet alternative replace the cheese for two banana's and add a drizzle of honey (remove the salt and pepper). 

As long as you keep the flour, eggs and baking powder the same you could add anything you fancy, (my partner would like ones with chocolate!) The cheese ones go brilliantly with marmite too :)
