Courgette Salad

This is currently my favorite summer lunch. Its a little time consuming in the morning but 'fail to prepare, prepare to fail'.


Ingredients:
1 courgette
1/2 red pepper
1/2 red onion
1 tbsp pine nuts
frozen peas
olive oil



Method:
Place the pine nuts into a frying pan and dry roast. While the nuts are roasting cut up the onion and peppers into cubes. Take the nuts off the heat and place onto a plate for later. Using a vegetable peeler peel the courgette into strips and place into boiling water for 3 minutes. In the frying pan add a little oil, once heated add in the onion, peppers and peas, fry for around 5 minutes. Place all the cooked ingredients into a bowl and top with the pine nuts.

There are also variations that can be made to this dish, my partner likes mushrooms, onions and peas.

This salad can be eaten hot or cold so is brilliant for taking to work and keeping in the fridge.
